Bean Calico

This is a spin-off of a meal Derek enjoyed while growing up.  He asks for ground beef and baked beans on occasion and generally that’s exactly what he gets.  A skillet of burger and Bush’s beans.  A friend made this recipe for us after Henry’s birth and I enjoyed it much more than our version.  This is very slightly more complex but definitely glorified.

When I prepare it on a whim, I usually leave out the bacon, only because I don’t generally keep it on hand.  My only other variance is that I always prepare it with whatever beans I have in the pantry.  Even when I’m planning ahead, I’ve found that canned lima beans can be difficult to find.  Fortunately, it’s equally good with cannellini or great white northern beans.

Ingredients

  • 1/2 pound bacon, diced
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 can pork and beans
  • 15 oz. can kidney beans, drained
  • 15 oz. can lima beans, drained
  • 1/2 cup ketchup
  • 1 tsp. salt
  • 3/4 cup brown sugar
  • 1 T vinegar

Brown bacon, beef, and onion; drain.  Combine all ingredients.

Simmer on stove or bake in 350F oven for 40 minutes.

Broccoli Bacon Salad

Ingredients

  • 1 large bunch broccoli
  • 1/4 red onion
  • 1/4 cup raisins, soaked
  • 1 12-oz. pkg. bacon

For dressing, combine:

  • 1 cup mayo
  • 2 T sugar
  • 1 tsp apple-cider vinegar

Mix dressing a day or at least a few hours ahead of time.

Clean and dice broccoli and onion.  Drain raisins and fry and crumble bacon.  Combine with dressing, chill and serve.

Egg Salad with Bacon

Egg and Cress Sandwich with Afternoon Tea

Ingredients:

  • 1/2 cup mayo
  • 6 large hard-boiled eggs, chopped
  • 1 celery rib, diced
  • 4 bacon slices, cooked and crumbled
  • 1 bunch chopped fresh scallions
  • 1 T minced sweet onion
  • 1/4 tsp. seasoned salt
  • 1/2 tsp. freshly ground pepper

 

Stir together all ingredients and serve on whole wheat bread with spinach leaves or romaine lettuce.

Creamy Potato Soup

Thick and creamy potato soup seasoned with onion and dill, topped with croutons
Ingredients:
  • 3 cups chicken broth
  • 1 cup chopped onion
  • 4 cups sliced and peeled potatoes
  • 1/4 cup butter, melted
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • Few dashes of pepper
  • 2 cups milk
  • 1/2 teaspoon dill
  • Seasoned croutons and crumbled bacon, for serving (optional)
Instructions: 1. Bring first three ingredients to a boil. Reduce heat and simmer 10 minutes or until done. Cool slightly, then blend until smooth. Set aside.

2. Stir together the next four ingredients. Add milk all at once. Cook and stir over medium heat until thick and bubbly. Stir into potato mixture. Add dill and heat soup thoroughly. Top with croutons and serve.

Crockpot Potato Soup

Ingredients:

  •   6 potatoes, peeled and diced
  •   1 small onion, chopped
  •   2 carrots, diced
  •   2 ribs celery, thinly sliced
  •   4 cups chicken broth
  •   1/2 tsp dried basil
  •   1 tsp dried parsley flakes
  •   1 tsp salt, or to taste
  •   1/2 tsp pepper
  •   3/4 cups cream or half-and-half
  •   4-6 T instant potato flakes
  •   crumbled bacon, optional

Combine potatoes, chopped onion, carrots, celery, chicken broth, basil, parsley, salt, and pepper in a slow cooker.

Cover and cook on LOW for 3 hours, or until vegetables are tender (My slow cooker runs hot so I will move it to KEEP WARM for a couple of hours after that).

Stir cream or half-and-half into soup.  Cover, switch setting to HIGH and cook 30 minutes longer or until hot. Add 4 T potato flakes;  add additional potato flakes in one tablespoon increments until desired consistency is reached (allow a few minutes between each addition to allow flakes to thicken).

If desired, sprinkle bacon bits over each serving.
Makes about 2 quarts.
